I found this fantastic recipe where it only uses 4 ingredients. How awesome is that? I've made it a few times now and everyone loved it - I guess it's chocolate, nothing would go wrong with chocolate. 😅 The downside to this recipe is that because there is no flour, my chocolate cake does not look that pretty. I don't know how this person achieve it, he probably has a way better distributed heating oven than I do (am sure of it) so his cake doesn't rise too high and crack and then flatten after it cools.

 

It's delicious but not-so-pretty version:

My Signature home made Chicken Pie ❤️

I made my own pastry, is so flaxy !

Chicken Pie with Homemade Pastry
 
Ingredients
 
PASTRY
  • 1 kg plain (all purpose flour)
  • 500 g unsalted butter
  • eggs large
  • 1 teaspoon salt
  • 8 tablespoon ice water
  • 1 tablespoon lemon juice
  • 1 whole egg + 1 teaspoon water for egg wash
PIE FILLING
  • Marinate for Chicken
  • 2 chicken breast deboned and skinless
  • 2 tablespoon light soya sauce
  • 1 tablespoon white pepper
  • 1 tablespoon Oyster Sauce

 

Ingredients for Filling
  • 2 tablespon cooking oil
  • 2 large onions chopped
  • 3 large carrots diced
  • 1 large potatoes diced
  • 2 pieces Shitake mushroom
  • 1 can Cream of Chicken

 

Instructions
PASTRY
  1. Add baking powder, salt and sugar into a bowl of flour and mix well.
  2. Cut cold butter into the flour and rub with fingers until mixture resembles fine crumbs.
  3. Add eggs and mix thoroughly until it all comes together.
  4. Add ice water a little at a time and mix well until it forms into a dough (follow youtube link below to make the pastry flaky )
  5. Divide the dough into quarters and wrap it up in plastic bags and press it flat.
  6. Refrigerate for at least an hour.
MARINATING CHICKEN
  1. Cut chicken into bite sized pieces and put in a container for marinating.
  2. Add light soya sauce,  white pepper and osyter sauce and mix well.
  3. Add to chicken mixture, mix well and set aside for 30 mins.
COOKING PIE FILLING
  1. Stir fry chicken meat turns partially white.
  2. Add diced carrots,onions, mushroom and potatoes and stir fry evenly.
  3. Pour cream of chicken all over and mix thoroughly.
  4. Let it simmer until potatoes and carrots soften.
  5. Taste and add more seasoning, as required.
  6. Remove from wok to cool down.
ASSEMBLING CHICKEN PIE
  1. Remove pie dough from fridge and roll it flat.
  2. Cut to required size and press cut out dough into a tart mould to shape. Trim excess dough and poke holes in the base with a fork.
  3. Fill each mould with pie filling and cover the top with cut out dough. Seal edges with a fork and poke holes on top.
  4. Arrange pies in a baking tray and brush the tops with egg wash.
  5. Bake in a preheated oven at 180C until golden brown, for about 20-30 minutes.

OMG, thank you @Tofu! I'm reposting the picture so it catches others' attention & so that I can drool while typing. I will try making these. I'm not motivated to bake lately but when I crave cookies, I make my own and I am in search of good cookie recipes. Any good ones for chocolate cookies? I've tried 2 recipes, they taste good, just don't look great, :lol:

Gluten Free Chocolate cookies

Recipes:

1 cup nuts of your choice

4 tbsp flaxseed

1 egg

1 tbsp vanilla essence

1 tbsp coconut oil

180g brown sugar

1/2 tsp salt

1/2 tsp baking soda

3/4 tsp baking powder

100 g dark chocolate

 

Step1

Mix all the above ingredients and chill in the fridge for 1 hour (cover with cling wrap)

 

Step 2

Preheat oven 10 mins before baking.

Make to round shape (your desire size) and bake @ 180c for 10-12 mins 

till brown and crispy.

New emoji! Do you have something to share too? I am waiting for weekend to arrive so I have more time to scroll through recipes. Last night I wanted to share good food on the other thread but took forever and keep getting distracted. Time flies so quick for weeknights too.

Lol...I don’t cook TBH these days . No disaster adventures even to share . But I do love looking at recipes . How else would I hv so many recipe books :lenny:

@abs-oluteMIt would be nice to have some storytelling to go with the wonderful yummy pictures. Making it more interesting. Hehe. You can share past baking disaster. I have some fugly cookie pics that can be shared lol, just need time to find those pics. I have recipe books I haven't touched too! Only good for 🧐 and 🤤

Seeded Crackers

I haven't made this yet but I've tasted this and it was good. :valid:

A recipe from a friend who has made it and I taste-tested and gave it a  :1000:

 

Serves/Makes: a lot...
Prep Time: 10 minutes
Cooking Time: 1 hour

 

Ingredients:

  • ½ cup Sunflower Seeds
  • ½ cup Flax Seeds
  • ½ cup Sesame Seeds
  • ½ cup Sunflower Seeds
  • ¼ cup Chia Seeds
  • 1 ½ cup Warm Water
  • 1 tsp. Sea Salt
  • approx. 1 tbsp. spices (for example Rosemary, Thyme, Smoked Paprika, Cajun etc.: I only added rosemary for the morning tea batch I made)

 

Directions:

  1. Preheat oven to 160 °C, fan-forced.
  2. Add all ingredients in a medium mixing bowl and stir to combine. Set aside for about 15-20 minutes until all water has been absorbed and the mixture has a ‘jelly like ‘consistency.
  3. Pour the seed mixture onto two baking trays lined with baking paper. Carefully spread the mixture out with a spoon or spatula: aim for a thickness of about 3 – 4 mm.
    NOTE: A cracker thinner than this will be very fragile and any thicker than this will result in more of a ‘cookie’ than a cracker.
  4. Place the baking trays in the oven and bake for 1 hour or until crispy and golden. Switch positions of the trays half way through.
  5. When the crackers are ready, take the trays out of the oven and let the crackers cool completely on the trays. Once cooled, the crackers can be broken into pieces (cutting them will most likely not work). Store in an airtight container for up to 5-7 days.

MATCHA CHIFFON CAKE

Ingredients (A) :

24g sugar

1g salt

3 eggs yolk (preferable size A)

 

Ingredients (B)

3 egg whites

52g vegetable oil 

70g milk

4g vanilla essence

72g plain flour ( I used cake flour)

8g matcha powder

1g baking powder

1g baking soda

50g sugar

 

Methods:-

* whisk egg yolks,salt,sugar till creamy

* pour in oil..continue mixing

* pour in milk and continue to mix

* add vanilla essence

* shift flour, matcha powder, baking soda and baking powder into egg batter

* preheat oven to 150C 

* whisk egg whites and sugar together till stiff ( better to use a mixer, else your hand will be tired)

 (means when you turn your bowl up side down, the meringue won't drip/fall)

* take 2/3 of meringue and mix with egg batter, do not over mix

* put the rest of the meringue and continue mixing

* pour into 18cm chiiffon pan and bake for 50 mins @ 150C

* after 50 mins, change temperature to 120C and continue baking for 15 mins

* Invert the cake to cool before unmould.

Pumpkin Buns

Ingredients

220g Bread Flour

30g Sugar

½ Tsp Salt

100g pumpkin puree

70ml +- Milk (Lukewarm)

1 tsp Yeast

20g unsalted Butter

Preheat oven @ 170C

 

Step 1

Steam pumpkin till soft and mashed up

 

Step 2

Sieve flour,add in pumpkin puree,sugar,salt,milk & yeast

Knead using K-hook mixer for 10 mins

Add Butter continue kneading till window pane

Proof at warm place for 60 mins or double in size

 

Step 3

Degas the dough and place to flour table top.

Cut into 8 equal pieces and fold each piece into round share

Cling cover for 15 mins

 

Step 4 

Flour table top, knead for few seconds.

Make to desire shape and second proof for 60 mins or double in size.

Egg wash before baking @ 170C ( 15-18 mins) depending on oven temperature.

 

Note: Store in air-tight container in room temperature for at least 3 days.

Ingredients (approximately 10 bowls)

4 mangoes (I usually add more)

260 castor sugar

40g gelatin (powder)

1 ¾ bowls hot water

2 egg whites (beat till fluffy)

1 bowl whipping cream

½ teaspoon mango essence

½ capful yellow food colouring

300g ice cubes

300g mango ice cream

 

Method

1.    Dissolve gelatin and sugar in hot water over slow fire

2.    Add mango essence and yellow colouring

3.    Remove from fire, add ice cubes, egg white and whipping cream. Mix evenly

4.    Add mangoes and ice cream. Mix until ice cream dissolves

5.    Pour into mould and chill

 

I have been raving to friends about how fantastic my mango pudding is. 10 years later, they still haven't had the opportunity to try LOL.
